Kapya Dolma

Ingredients

  • 8-10 pieces Red Kapya Peppers
  • 1 cup cup rice
  • 250 g Minced meat (can be lamb, beef, or a mix)
  • 1 pieces Onion finely chopped
  • 2 table spoon Tomato Paste
  • 1 table spoon Olive Oil
  • 1 tea spoon Ground Black Pepper
  • 1 tea spoon Ground Cumin
  • 1 tea spoon Dried Mint
  • 1 tea spoon Salt can add more to taste

Instructions

  • Begin by preparing the red Kapya peppers. Cut the tops off and remove the seeds, keeping the peppers intact. Rinse them thoroughly.
  • In a bowl, mix the rice, minced meat, chopped onion, tomato paste, olive oil, black pepper, cumin, dried mint, and salt. Combine the ingredients thoroughly to form the stuffing.
  • Gently stuff each prepared pepper with the rice and meat mixture, ensuring they are filled but not overly packed to allow the rice to expand during cooking.
  • Place the stuffed peppers in a deep cooking pot, arranging them snugly to prevent them from falling apart while cooking.
  • Pour enough water over the peppers until they are halfway submerged. Cover the pot and cook over low-medium heat for approximately 40-45 minutes or until the peppers are tender and the filling is cooked through.
  • Once cooked, remove the stuffed peppers from the pot and let them cool for a few minutes.
  • Serve the Kapya Dolma on a platter, garnished with fresh parsley for an added touch of flavor and freshness.
